The galley provided food services for Flying Yankee patrons. A replication of the original countertop is being custom manufactured and will be installed after the new appliances are brought into the car. It was necessary to panel the walls in stainless steel since the original kitchen appliances will not be used and they covered most of the walls. The original appliances will be placed in archives.
In the galley, like the rest of the Yankee, every effort is made to minimize structural and cosmetic changes. Future historians and preservationist may someday wish to restore it to museum quality and it's 1934 factory condition. We make every effort and go to great lengths to insure that they can.
